Healthy No Mayo Tuna Salad

Serves: 4

Ingredients
  • 3 cans tuna, drained
  • 2 stalks celery, thinly sliced
  • 1 carrot, shredded
  • ¼ cup diced onion
  • ½ red bell pepper, diced
  • ⅓ – ½ cup olive oil
  • 2 -3 tablespoons lemon juice (1 lemon)
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • Salt & pepper to taste
